VEGAN PIZZA

This is a delicious pizza alternative. Good for you. Loaded with nutrition. Organic. Gluten Free. Fully plant based.

INGREDIENT LIST

  • Brown Rice Tortillas – Food for Life
  • Plain Hummus – Simple Truth Organic
  • Tomato Sauce – Simple Organic 15 ounce can
  • 1 large Green Pepper
  • 1 small Zucchini
  • 5-6 green onions
  • 5-6 cloves of garlic
  • Mushrooms of your choice
  • Shredded Carrots
  • Seasoning of your choice. I used organic Basil/Oregano/Sea Salt
  • OPTIONAL – Mozzarella Cheese

INSTRUCTIONS

Pre-heat oven to 450 degrees. Sauté chopped green peppers, zucchini, green onions, garlic cloves, seasoning in organic olive oil. Sauté until close to tender. While the veggies are cooking place four tortillas on two cookie sheets. (I had to use two because the tortillas are large) Spread hummus on top of the tortillas first then spread tomato paste on top of the hummus. If you choose to add mozzarella cheese you can add a thin layer at this time. If you’d like a bit more seasoning go ahead and sprinkle a bit on top of the mozzarella. When the vegetables are finished sautéing add some of the mixture on top of each tortilla. Top it all off with shredded carrots. Bake at 450 degrees for approximately 10-12 minutes. If you like the tortillas crispy like we do, bake them the maximum amount of time. Use your pizza cutter to cut into wedges and enjoy!
